Return Post! (With a recipe, of course)

I haven't posted here in quite a while, though I promised some time ago that I'd be back... So this time, I really am! Husband brought home some chicken thighs, and I got to looking around to see what I could do with them.

I found these limes he bought a couple weeks ago when I asked for lemons. I don't know what I wanted lemons for, but limes weren't going to work, so they've just been sitting there. It reminded me of when I made tequila lime chicken fajitas last summer. They were absolutely amazing.

So I tried something like that with this chicken, and threw in some honey to help the skin crisp up. I also tried my hand at corn bread. It was awful, at best. I ended up crumbling some in a bowl with extra butter and honey. My husband took a bite and set his down :/ Of course, I wasn't following instructions very well at all. Oh well. Hard to get back on the wagon I guess.

So, I'll talk about the chicken! I made 3 thighs, so I'm not talking much about measurements. A lot of this was 'to taste'.
Marinade:
The juice of half a lime
A couple shots of gold tequila
Generous amount of honey
Pinch of red pepper flakes
Sprinkle of pepper

Preheat oven to 400F.
Set thighs on baking sheet.
Top skins with cilantro, garlic powder, and a tiny pinch of salt.
Put those babies in oven.
After 30 minutes, turn the heat up to Broil to brown the skins a bit (for 5-10 minutes, just watch them).
Pull them out and serve!

 I'd put up pictures gladly, as they did look pretty, but they smelled so good that we devoured them right away!
